<p>1 tbsp butter<br />
1 tbsp flour<br />
1 c. milk<br />
1/2 tsp. salt<br />
1 c. grated sharp cheese<br />
3 eggs, separated<br />
1 c. cooked spinach</p>
<p>Make white sauce of first 4 ingredients. Add cheese: stir until blended. Add unbeaten egg yolks, 1 at a time. Add spinach; mix well. Beat egg whites until stiff; fold into mixture.
